COWBOY CAVIAR
from the fine kitchen of mrs. sarah haslip

1 can shoepeg corn, drained
1 can black-eyed peas, drained
1 chopped tomato
1 bunch cilantro
1 small bunch green onions, chopped
2 avocados, chopped
1 t. cumin
1/8 t. pepper
3/4 t. salt
1/4 c. red wine vinegar
1/4 c. olive oil
2 cloves garlic

mix well.
